Lake Champlain Bakery opened its doors in 2017, founded by Maria Popescu, a Romanian baker who spent years apprenticing in artisan bakeries across France, Germany, and Switzerland. Maria's vision was simple yet ambitious: to bring authentic European baking traditions to Cluj-Napoca while embracing the rich Romanian culinary heritage.
What started as a small neighborhood bakery with just two ovens has grown into a beloved institution, serving thousands of families, cafes, and restaurants throughout Cluj-Napoca. But growth hasn't changed our core values—every loaf is still hand-shaped, every recipe is still made with natural ingredients, and every customer is still greeted with a warm smile.
In an era of industrial production and shortcuts, we've chosen a different path. Our sourdough starters are over 5 years old, carefully maintained and fed daily. We allow our dough to ferment for 24-48 hours, developing complex flavors that simply cannot be rushed.
Our stone ovens, imported from Italy, are heated to precise temperatures using traditional methods. This slow, intentional approach results in bread with a crackling crust, an open crumb structure, and a depth of flavor that reminds you why bread has been called "the staff of life" for thousands of years.
